Ingredients for Jalebi recipe
- All-purpose flour
- Sour curd
- Lemon wedges
For Jalebi, you need pouring consistency batter. Take a large bowl to make the batter and add all-purpose flour. Add sour curd with flour and mix it well. If the consistency is too thick, you can add some water. Whisk it properly for at least 10 minutes till it becomes smooth. Keep it aside for a while.
Now take a huge vessel and heat sugar and water on the medium flame. Keep stirring it for smooth syrup. Sugar will slowly dissolve and turn into a smooth syrup. At this point, add the lemon wedges and milk in the syrup. This mixture helps with accumulating dirt from syrup. And also, it results into a nice looking transparent color.
Now you might see some dirt forming on top of the syrup. Take it out to discard. For a saffron/kesar touch, soak saffron with warm milk and leave it aside for few minutes. Transfer this mixture in syrup. And keep it aside.
Now it’s time to fry jalebi now. Check the batter now, and if consistency is too thick, you can add water. Or else, if it’s too thin, add all-purpose flour for pouring consistency of jalebi. Heat ghee for frying! Transfer batter in the piping bag. Push jalebi in the frying ghee in the circulation motion. Take it out once jalebi turns golden.
Now soak jalebi in warm syrup for 2 minutes. Take it out and garnish with the mentioned ingredients. The recipe of jalebi is ready; and serves it on the side of warm almond or turmeric milk for breakfast.
